Coconut and Lemongrass Ribs- This will be a new twist on the old grilled rib recipe. I’m interested in hearing from others what they think of this recipe so please respond with your comments.
Coconut and Lemongrass Ribs

A new twist on the standard grilled rib recipe.
Ingredients
  • 4 lb (2 kg) pork ribs
  • Milk
  • 2 cups (500 mL) coconut milk
  • 2 fresh lemongrass sprigs, finely chopped
  • 1/2 tsp (2 mL) ground coriander
  • Juice of 2 limes
  • Salt and pepper
  • Unsweetened grated coconut
  • Directions to make Coconut and Lemongrass Ribs
Instructions
  1. Step 1:
  2. Trim fat from ribs with small knife. Cut in 4 even pieces. Bring to boil a large saucepan of water with some milk. Cook ribs in boiling water for 5 to 6 minutes. Drain ribs and pat dry with paper towels.
  3. Step 2:
  4. Place ribs in a large shallow dish. In bowl, mix coconut milk, lemongrass, coriander and lime juice. Season to taste with salt and pepper and pour over ribs. Cover and marinate for 6 to 24 hours, turning occasionally
  5. Step 3:
  6. Remove ribs from marinade and cook on barbecue grill over medium heat for 15 to 20 minutes, turning occasionally and brushing with marinade. Serve immediately with coleslaw. Garnish with grated coconut and chopped lemongrass.
